Gattonelli is certified by Global Culture, a federally accredited certifier. We are also enrolled in the California Organic Program. The farm management is focused on building organic matter, and maintaining a nutrient balance and mineral balance in the soil. We achieve this by cover cropping, and a crop rotation, and annually adding compost. These three management schemes help to improve soil quality and ensure that the land is as productive as possible. We monitor the health of the soil through visual observation and regular soil tests.

All chili sauces have garlic and white vine vinegar in them.
Cayenne is high in vitamin A. It also contains vitamin B6, vitamin E, vitamin C, riboflavin, potassium, and manganese and has been shown to aid in the oxidation of adipose tissue, regulate high blood pressure, promote healthy liver function and tissue production, help regulate the digestive system, and promote healthy mucus production in the membranes that line internal organs. Cayenne pepper is also claimed to be an aphrodisiac because it contains capsaicin.
Hot paper lantern is an elongated red Habanero-type chilli. It is renowned for its mouth-blistering heat, reaching more than 400.000 units on the Scoville scale. This is our most vicious product, handle with care!
All tomato sauces have no salt or sugar added to them.
Orange blossom (slicing variety): The medium-firm, globe-shaped fruits average 6-7 oz., have a nice texture, and are mildly flavored, balanced with a little acidity.
Oregon spring (slicing variety): Average 6-7 oz. fruit. First early harvest of ours.

This versatile product can be used in stews, beans, curries, or you can make your own sauce with it. Stewed tomatoes are a terrific ingredient to have in the kitchen.
Onions are available seasonally.
Walla walla: This sweet onion was developed by selecting and reseeding onions from each year's crop that possessed sweetness, jumbo size and round shape.
Courtland:
Cipollini: This is a smaller, flat, pale onion. The flesh is a slight yellowish color and the skins are thin and papery. These are sweeter onions, having more residual sugar than garden-variety white or yellow onions, but not as much as shallots.The advantage to cipollinis is that they are small and flat and the shape lends them well to roasting. This combined with their sweetness makes for a lovely addition to recipes where you might want to use whole caramelized onions.
Greens are available seasonally.
Kale: has the most nutritional value for fewer calories than almost any other food. A 2 ounce serving of Kale has 170% of the recommended daily value(RDA) of vitamin A, 110% of the RDA of vitamin C, 8% of the RDA for Calcium & 6% of the RDA for Iron.
Swiss chard: contains high levels nitrates, which been shown to lower blood pressure, reduce the amount of oxygen needed during exercise and enhance athletic performance.
Basil: this versatile spice herb has significant anti-bacterial properties.
Garlic and elephant garlic are available seasonally.
One could write books about the health benefits of garlic. These include help in regulating blood pressure, fighting common cold and lowering risk of heart disease.
Dried beans are available first in 2016!
Black coco beans: Black Coco soup has an unparalleled, robust flavor. It can be a complete meal in itself. Also good for refritos.
Vermont cranberry beans: The cranberry bean has long been used in Italian cuisine, but has more recently been introduced to the North American palate. As a dry bean, the variety stores exceptionally well.
